I don’t know about you, but I’m always in a rush to get out the front door in the morning. I keep telling myself that someday I’ll force myself to get organized and then take certain steps to make the mornings run more smoothly……setting my outfit out the night before, etc… I never do. Oh well, I think it’s time to accept the fact that my mornings will always be rushed so my breakfasts need to be quick.
Now quick doesn’t mean unhealthy. After 45 years, I know my body and what it needs for fuel in the morning verses eating something that will make me feel awful within a couple of hours. I seem to feel best after eating something light and not too sugary. I try to leave the sugar for my coffee. I’m not always good about the no sugary substances in the morning rule, but I pay for it if I’m not. Ugh…the sugar crash! Not fun.
Egg whites with feta cheese is one of my quick favorites. I find egg whites themselves to be quite bland but the tangy feta makes it a whole different experience. Sometimes I just use salt and pepper and call it a day, but some seasoned salt and then hot sauce is to die for on these eggs. Truthfully, I have such a hot sauce fetish that I could almost put it on anything I’m eating. Yummy!!!
I know this quick breakfast isn’t fancy, but fancy just isn’t what I’m looking for when I’m watching the clock. Don’t skip breakfast….now scoot!!!
I start with a little bit of butter in the pan for extra flavor, but use your favorite cooking spray if that’s what you prefer. After the butter is melted, pour in the egg whites and then immediately sprinkle in the feta crumbles. I usually buy my egg whites in these single serving containers as I find them to be a perfect portion. I also buy my feta already crumbled in a pretty big tub because I love it so much that I use it on salads too.
The key to good scrambled eggs is low and slow….low temperature for slow cooking. This still cooks in less than a minute though.
Now sprinkle the seasoned salt…..
Then the beloved hot sauce…….and ENJOY! Now go get dressed and go to work, or drive the kids to school, or whatever it is that’s making you run out the door in the morning.

- ½ tsp of butter or oil spray for pan
- ½ cup of egg whites or small pre-measured single serving carton
- 2 Tsp of feta cheese or more to taste
- seasoned salt
- hot sauce
- Melt the butter into the pan or spray pan with oil and then heat over medium heat.
- Pour egg whites into pan and immediately sprinkle with the feta cheese.
- Stir slowly until scrambled...about 30 seconds total.
- Put the eggs onto the plate and sprinkle with the seasoned salt and hot sauce to taste.
