*deep sigh* So Christmas Eve is here. Am I prepared? Are you? Well, it’s not that bad really. The food shopping has been done, except for one minor item….THE MEAT! I went to three different grocery stores last night and no one had any Cornish game hens left. I was assured, however, that fresh shipments of food would be available today, the absolute worst day with the worst crowds for any kind of shopping. I shall forge through. I will put my head down, burst through those doors and fight for the meat.
I do have a back up plan though. If I can’t find the hens, we’ll be eating regular, but still delicious, chicken. My family loves a roast bird and I’ve already purchased the ingredients to go with it. Below is my yummy menu. I’ll try my best to take some pictures along the way and then will post the recipes.
Herb roasted Cornish game hens, cornbread stuffing with chorizo sausage, gravy made from the drippings (of course), cranberry sauce, oven roasted rosemary veggies (carrots, potatoes and parsnips), and green bean casserole (because no Fall holiday is complete without it). For dessert Hubs has requested that I make the blackberry cobbler again. I’m happy to make that for him but to save some time, I also have a store bought delicious looking chocolate mousse cake to make my chocolate lovin children happy too. I’m extremely excited and hope that it all works out as planned. I’ll certainly let you know. I hope your menus are scrumptuous as well. Please let me know what you make. I’m always looking for suggestions.
