This is another superfast yet super flavorful sandwich that I like to make for Hayley’s lunch. This one, however, was for Marc because it has an extra kick to it. That boy sure likes things to be spicy. He says it’s in his blood. I’m happy to oblige.
Aside from being tasty, this sandwich is also vegetarian for all of you wonderful, disciplined veggie people. I strive to be more like you…..someday……baby steps.
It’s also all organic for those of you who’d rather do without pesticides or genetically modified organisms. I’m feelin that too….again….baby steps, but I’m on my way. Just buy all organic ingredients for that extra healthy perk with this sandwich.
Bring on the flavor!
Spread pesto onto a sturdy bread such as a baguette. I used store bought pesto this time, but homemade is lovely. If your bread is too thin, your sandwich will be soggy.
Chop up the mozzarella cheese, sun-dried tomatoes and fresh basil….lots of basil. The smells at this point actually brought Hubs into the kitchen, wondering what the heck was going on at 6:30 in the morning. He then made me promise to make him one too. I can do that honey!
Here’s that kick that Marc loves but Hayley doesn’t. This ingredient is completely optional.
Add salt, pepper and a drizzle of balsamic vinegar and mix it up. This is a pretty, aromatic and flavorful salad as is too. I’ve served this as a side dish.
Now pile it onto your bread that you’ve already spread with pesto.

- Sturdy sandwich bread
- 2 Tbsp. pesto sauce
- ¼ cup chopped mozzarella cheese
- ¼ cup chopped fresh basil
- ¼ cup chopped sun-dried tomatoes
- salt and pepper to taste
- 1 Tbsp. balsamic vinegar
- pinch of red pepper flakes (optional)
- Spread the pesto onto your bread.
- Mix together the rest of the ingredients and pile onto the bread.
