I LOVE LOVE LOVE my weekend bagels and lox!! It’s just the one thing that I crave. My mouth is watering even now thinking about it. For a while, I would head into the local Manhattan Bagel and get a salt bagel with scallion cream cheese, lox, onions, tomato and pepper. Yum!
There is only one issue with my beloved weekend breakfast. I dislike it when I can’t easily take a bite without a big flap of lox hitting me in the face. (I heard you laugh…humpf!) This happens because of the connective tissue in the lox that just doesn’t want to let go, or maybe I just need sharper teeth. hmmm…. It’s unpleasant though, like biting into a steak sandwich and having a hug piece of meat come out of the sandwich. It also becomes a texture issue for me.
To solve this complex and oh so important problem, I started eating lox spread. However, I always felt as if I could make a better one and that’s what I set out to do.
My Flavorful Lox Spread is a combination of all that I think is yummy on a bagel with lox. I hope you enjoy it too. Oh, it sure is pretty and could also be a sophisticated spread to take to a party on mini bagels or with bagel chips or so many other choices of dip holders. The possibilities are endless.

- 1 Large tub (11.5 oz.) whipped cream cheese
- 8 oz.lox, chopped
- 1 large shallot, chopped
- 2 Tbsp. chives, chopped
- 2 Tbsp. dill, chopped
- 1 Tbsp. paprika
- Juice of 1 lemon wedge
- salt and pepper to taste
- sliced tomato and cucumber
- thin sliced toasted bagel
- Mix together the first 7 ingredients.
- Spread the lox spread onto the sliced, toasted bagel half.
- Put sliced tomato and cucumber on top. (optional)
- Add salt and pepper to taste.
