As I wandered through the aisles of the grocery store last evening, wondering what kind of new sandwiches I could make Marc, my adorable stepson, to keep him from getting bored with his usual lunch fare, it dawned on me that I’d never made him a Buffalo chicken wrap for lunch. Who doesn’t like a Buffalo chicken wrap? I’m going to be stepmom of the year!
Why stop there though? What about a Ranch chicken wrap with bacon for the next day? Heck, I’ll just alternate sandwiches for the whole week. Who’s better than me? No, really?
I quickly gathered my ingredients and headed for the checkout line. Not really, by the way. I’m a complete slow poke in the grocery store and I shopped hungry which is always a big mistake. Everything looks good when I’m hungry….EVERYTHING!
I left the store, feeling poor after my way too costly purchase, and headed home to try to find room for everything. We’re getting married in less than three weeks, have just moved everything I own into his home, and are now maneuvering through a maze of boxes until the construction is done in the basement. Lots going on people….lots going on….
Soon after I got home, cutie patootie Marc walked in the door. Frank and I each stood and did the wave as if at a ball game. Marc looked disturbed by our nerdy display of excitement that he was home. Moving on…
Later on Marc pointed out that he’s not big into blue cheese. GASP! Does this mean that he’s the one person who doesn’t like the Buffalo chicken wrap? Oh contraire! He then described a combo sandwich which he thought sounded like the bees knees. His creation is the Spicy Ranch Chicken Wrap with Bacon. Thank you Marc.
Now wipe the drool off of your chin and sprint into your kitchen and try it. Oh yea….
I like to build my sandwiches on top of what I’ll be wrapping them up in. In this case, I’m using Press’n Seal plastic wrap. I find it wonderfully convenient.
Lay your wrap on the plastic and put on some nice crunchy lettuce.
Now add on the goods, and by goods I mean chicken, diced tomato, crumbled bacon and cheese. (which I forgot in this picture cuz I’m flaky)
Now drizzle on your favorite Ranch style dressing. I used Ken’s Buttermilk Ranch. Yum!
Next comes the Buffalo sauce. I used Frank’s, but any will do. Seriously, doesn’t this look tasty?
Wrap that baby up!
I cut it then wrap it again so that it’s easier to eat later. I know….I’m sweet that way. giggle Marc loved this sandwich. Major stepmom points!
Here’s the printable!
- 1 flour tortilla
- 1 romaine leaf chopped (or any other favorite lettuce)
- ¼ cup cooked chicken, chopped
- ½ small Roma tomato, chopped
- 1 cooked bacon strip, crumbled
- a sprinkle of grated cheese, either cheddar or Monterey Jack
- a drizzle of Ranch style dressing
- a drizzle of Buffalo sauce
- salt and pepper to taste
- Lay the tortilla on a piece of plastic wrap.
- Layer with all of the ingredients then wrap it up.
