As some of you already know from reading this post, Chicken Breasts with Tarragon Mustard Sauce, I’ve only recently discovered how much I like tarragon and mustard together. It’s truly a new love affair. I’m pretty sure the youngins are happy about this too.
I’ve got three kids living at home this summer, Marc, Mariah and Hayley. All three of them are eating machines….just sayin. Hayley goes to camp each day full-time and needs a hearty lunch. Marc and Mariah are in and out with jobs, friends, blah blah blah, and need something that is already prepared. This is because Marc’s idea of cooking is nuking a frozen burrito and Mariah should not be allowed in the kitchen….ever! Seriously, I’m pretty sure she could burn water.
My refrigerator is always stocked with fruit, salad fixin’s, yogurt, humus, etc…. oh, and the ever-present tuna salad. I love tuna salad. Marc loves tuna salad. Mariah loves tuna salad. Hayley loves tuna salad. However, while we all love it, I think we need a break. Too much of a good think…ya know.
Yesterday evening Frank and I visited a new place in our town called The Meat House. It’s a neighborhood butcher shop that also has salads, sandwiches and some dairy items as well. We left there with a beautiful sirloin steak and some large skinless chicken breasts. We grilled the steak for dinner and the chicken breasts for recipes during the week.
I decided to make my basic chicken salad and then add in the flavors of the mustard and tarragon. I must say that it turned out quite well. I wonder what the youngins will say about it. Regardless, I absolutely loved it. The mustard and tarragon, along with a small squeeze of lemon juice, added a lovely tang to the salad. Yum.

- 3 grilled chicken breasts, chopped
- 2 celery stalks, finely chopped
- ½ onion, finely chopped
- ¼ dried cranberries, chopped
- ½ cup mayonnaise
- 1 Tbsp. Dijon mustard
- 1 Tbsp. fresh tarragon, finely chopped
- juice of 1 lemon wedge
- salt and pepper to taste
- Put the chicken, onion, celery and cranberries in a bowl.
- Mix together the mayonnaise, mustard, tarragon and lemon juice.
- Combine the mayonnaise mix with the rest of the ingredients.
- Salt and pepper to taste.
