At this moment in time, this smoothie is one of my absolute favorites. It is creamy and delicious and refreshing and lovely. It’s also vegan. There’s an added perk!
Hayley and I often like to have smoothies after our long walks through town. We live in a beautiful town with lots of hilly sections, which are great for working the butt. We huff and puff and swing our arms and remind each other to hold in our tummies. “Abs!” That’s what either of us says when it’s time for a reminder. It works for us.
As we walk up and down the well maintained streets, we gaze at the beautifully landscaped, lush, green front lawns of each house and make mental notes as to which flowers we’d like to plant in our own yard. Hayley also likes to point out which styles of homes are her favorites and will most likely be what she’ll have someday…when she graduates…and moves out…and has A JOB! Oh joy! Fingers crossed! I’ll miss her when she had her own place and isn’t on my couch, snuggling Cosmo like he’s a baby. I really will. However, I’ll gladly drop by, anytime I’ve been invited, so she can cook for me.
One day last week, after an extended walk with more hills than usual, we blended up this smoothie and had it for lunch. It was just the right amount of sweetness without us having to add any honey at all. We also used frozen fruit as it’s easier to keep around in the house. (I truly hate black bananas on my counter.) Because we were making it a meal, we also added some protein powder so we wouldn’t be hungry again in an hour or less.
So take a long walk with your child, husband or best friend and enjoy the summer, along with smoothies, while the weather still permits. I can already feel the end of summer coming as I receive so many promotional emails with all of the new Halloween decorations for this fall. Really! It’s happening. Aside from the Halloween emails, I went shopping for shorts this past weekend and was told by a salesperson that they’re almost out of shorts because the fall clothes are coming in. Fall clothes? It’s been 90+ degrees for days. Seriously?!
- Blend until creamy.
- If you prefer a thinner smoothie, add more water, ¼ cup at a time.
